Sourced from the Shizhuo tea area of Alishan, at an altitude of approximately 1400 to 1600 meters. Lightly roasted to preserve its pure mountain essence, the first sip offers a gentle sweetness. As it glides over the palate, a delicate orchid fragrance unfolds, leaving a lingering sense of familiar comfort and warmth.
【Kame Time Hot Brew Method】
1. Warm the Pot: Pour hot water into the teapot (or other brewing vessel) to gently warm it. Discard the water after 30 seconds.
2. Dry Aroma: Add an appropriate amount of tea leaves to the pot (enough to cover the bottom closely; about 7 grams per serving, adjustable to personal preference). Bring the vessel close to inhale the aromatic steam released by the heated leaves for a calming experience.
3. Awakening Infusion:
For the tightly rolled leaves of Oolong tea, pour hot water (95-100°C) into the pot and allow it to gently steep for about 4-5 seconds before discarding. This step helps loosen the leaves, allowing them to unfurl and release their flavor more easily in subsequent infusions.
4. Tasting Brew: Pour hot water, cover with the lid, and let it steep for approximately 2 minutes. Then, pour into a fairness pitcher. It is recommended to collect 2-3 infusions in the pitcher to enjoy the blended essence of each steep.
5. Subsequent Infusions: For each subsequent brew, increase the steeping time by 15-30 seconds.
*Up to 6-7 infusions can be achieved starting from the awakening infusion.
For high mountain Oolong with ball-shaped leaves, a clay teapot is recommended. Its slower heat dissipation helps maintain temperature and provides ample space for the leaves to expand.
【Simple Brew for Office Workers】
1. Spread the tea leaves evenly at the bottom of the tea infuser.
2. Hang the infuser in your mug.
3. Head to the pantry, chat with colleagues, and carefully pour about 350cc of boiling water (90-95°C).
4. Steep for 4 minutes until the leaves slightly unfurl and the liquor turns yellow. Remove the infuser and enjoy.
For subsequent infusions, add 1 minute to the steeping time for each brew. This method yields 2-3 infusions.
【Sleepy Cold Brew Method】
1. Combine 5 grams of tea leaves with 500cc of water in a bottle.
2. Place the bottle in the refrigerator and let it steep overnight (approximately 8-10 hours). In the morning, simply strain out the tea leaves (to avoid bitterness) and enjoy.
