Nestled at an altitude of 1100 meters on Jiufen'er Mountain in Guoxing Township, Nantou, our tea bushes are cultivated using natural farming methods, free from pollution. During the tea-making process, tea masters meticulously place the Qing Xin Oolong tea leaves into a cloth bag for rolling. This artisanal step, known as "cloth rolling," imbues the tea leaves with a craftsman's spirit. After repeated rolling, the leaves form a firm, uniform semi-spherical shape, with a characteristic red edge around the unfurling leaves – the hallmark of Dong Ding Oolong. When steeped, the tea liquor gleams a golden amber hue. Its aroma is understated yet elegant, with a smooth, sweet taste and a profound lingering finish. It is **the most representative Taiwanese tea.**
Unlike the common oolong cultivars typically used for Dong Ding Oolong, "Halfday Tea Institute" exclusively selects the Wuyi tea varietal, a type that is gradually disappearing in Taiwan. This old varietal, once widely cultivated in Taiwan, is well-suited for higher fermentation and roasting. Our Dong Ding Oolong embodies a heritage of old and new cultures, offering a taste of medium fermentation and medium-roasting that is both palate-moistening and smooth, with a full lingering finish. It uniquely carries the floral notes of the Wuyi varietal, maintaining a traditional essence while embracing modern craftsmanship. **Loose Leaf Series**
Brewing Gongfu tea offers a touch of ritual. Amidst the selection of tea and teaware, the amount of tea, water temperature, and timing, one can savor the enjoyment of brewing. During the infusion, experience the slowly unfurling aroma. Using a small teapot for small cups allows for appreciating the aroma at the bottom of the cup and tasting the evolving flavors of the liquor.
Teapot Brewing Method
1. After boiling water, pour it into the teapot to warm it. Fill halfway and pour out after about 30 seconds into a fairness pitcher or cup warmer.
2. Add tea leaves, approximately 1/3 to 1/2 the height of the teapot. Cover and wait about 5 seconds. Open the lid to inhale the "pre-infusion aroma."
3. Gently pour 95°C-100°C water until the pot is nine-tenths full. Cover and steep for the first infusion for about 45 seconds, then pour into the fairness pitcher. The second infusion takes about 30 seconds, and subsequent infusions (third to fifth) should increase by 30 seconds each.
4. Adjust the amount of tea leaves and steeping time according to personal preference.
Cup Brewing Method
1. Rinse the inside of the cup with hot water to maintain heat for subsequent brewing.
2. Spread the spherical tea leaves evenly at the bottom of the tea infuser, about 1-1.5 cm high.
3. Recommended water temperature is 95°C-100°C. Gently pour in the hot water.
4. Drink once the tea leaves have infused their color.
5. Adjust the amount of tea leaves and steeping time according to personal preference.
