Yame produces the best and authentic gyokuro in Japan. 30 days prior to harvest, the gyokuro trees are covered by grass to avoid direct sun exposure. Without exposure to sunlight, gyokuro develops a very special flavour and a fragrance called umami in Japanese, resembling that of seaweed. The texture of gyokuro is thick and smooth, lingering on your tongue with the umami fragrance, hence the name in Japanese means "Jade Dew".
This gyokuro white tea is even more premium using only natural variegated tea leaves which gives more fragrance. Compared with the ordinary gyokuro, it contains some nutty flavours which balance so well with the umami flavor.
