Organic Shoumei White Tea

White tea is lightly fermented to about 20 or 30 percent. During processing it is only lightly cooked to avoid damage to the edges of the leaves. The light hairs on the leaves are preserved by sun drying or by drying the leaves over a low burning fire. When the tea is brewed, the undamaged leaves spread out, creating a very light crisp tea of a pale color. White tea has very little caffeine (an average 8oz. serving contains approximately 15mg of caffeine) and brews to a light color and flavor. Many tea drinkers appreciate white tea for their subtlety, complexity, natural sweetness, and delicacy.
