We do not blindly pursue roast levels, with the primary goal of presenting the original flavor of the green coffee beans.
We first test the overall profile of the green beans using our standard roasting technique. After cupping, we determine the desired flavor profile based on the characteristics of the beans. After reviewing the roasting curve, we adjust and refine to find the optimal roast level for the beans to achieve the best flavor presentation, emphasizing clear flavors, bright acidity, rich sweetness, and overall balance.
