**Loose Leaf Series**
Brewing Gongfu tea offers a refined sense of ritual. Between the choices of tea and teaware, the amount of tea used, water temperature, and timing, you can savor the art of tea preparation. As you brew, immerse yourself in the slowly unfurling aroma, using a small teapot and serving in small cups. This method allows you to appreciate the lingering fragrance at the bottom of the cup and the evolving taste of the tea liquor.
🔹 **Teapot Brewing Method**
1. After boiling water, pour some into the teapot to warm it. Fill to about half capacity, then pour into the serving pitcher or cup after approximately 30 seconds.
2. Add tea leaves, filling the teapot to about 1/3 to 1/2 of its height. Close the lid. After a brief pause of about 5 seconds, open the lid to inhale the "pre-brew aroma."
3. Pour 95°C-100°C boiling water over the tea leaves in a swirling motion, just enough to cover them. Gently shake to allow the leaves to unfurl, then discard the water after about 5 seconds. This step is called the "awakening rinse," designed to release the tea's aroma and flavor more quickly.
4. Refill with hot water to about nine-tenths full, then cover. For the first infusion, pour into the serving pitcher after approximately 50 seconds. For the second infusion, steep for about 30 seconds. For the third to fifth infusions, increase the steeping time by 30 seconds for each subsequent brew.
🔹 **Cup Brewing Method**
1. Rinse the inside of the cup with hot water to maintain the temperature during brewing.
2. Spread the spherical tea leaves to fill the bottom of the infuser or tea basket to a height of about 1-1.5 cm.
3. Recommended water temperature is 95°C-100°C. Pour hot water gently.
4. The tea is ready to drink once it has released its color.
5. Adjust the amount of tea leaves and steeping time according to your preference.
