The cultivation method for tea leaves is almost the same as for Gyokuro, where the entire tea field is covered for about 20 days before harvest to block direct sunlight. This cultivation method suppresses catechin and produces the umami component theanine. After harvesting, the leaves are steamed and dried without rolling to become "tencha".
It is also highly recommended to enjoy it as cold tea.
