We begin by testing the beans using our shop's standard roasting technique to assess their overall profile. Following a cupping session, we determine the desired flavor profile based on the bean's unique characteristics. After reviewing the roasting curve, we adjust and refine it to find the optimal roast level, thereby maximizing the bean's flavor expression. We emphasize clear flavor notes, bright acidity, rich sweetness, and overall balance.
