We begin by testing the beans using our standard roasting method to assess their overall profile. After cupping, we determine the desired flavor direction based on the bean's characteristics. We then review and adjust the roasting curve to find the optimal roast point that maximizes the bean's potential, emphasizing clear flavors, bright acidity, rich sweetness, and overall balance.
