"You know what? Alishan tea is so unique that if you use oolong to make black tea, you can actually taste the oolong in the black tea." The tea farmer shared with us his years of experience in making oolong black tea. It's not easy to fully ferment high mountain black tea, especially the Alishan "green tip oolong" he chose. Different from the typical dah yeh oolong used in making black tea, he had to spend years, through trial and error, on finding out the ideal method to pick the green tip oolong. He was also able to master the "withering" step to preserve the strong flavor.
"Why did you decide to make black tea?"
The tea farmer told his story while boiling mountain spring water in a big kettle. "I've made tea for decades! Over the past few years, the question of 'What kind of tea would young people (or even I) want to drink?' started to pop up. Traditional oolong seems too convoluted for young people to take an interest, so I decided to bring Alishan black tea to them..." The kettle started to make noise. The tea farmer gently poured the hot water into tea cups, filling the air with sweet and strong flavors.
