**Loose Leaf Series**
Brewing Gongfu tea offers a refined sense of ritual. Enjoy the nuances of tea preparation through the selection of tea and teaware, the precise amount of tea leaves, water temperature control, and timing. Immerse yourself in the slowly unfolding aroma during the brewing process. Using a small teapot for small cups allows you to savor the lingering fragrance at the bottom of the cup while appreciating the evolving taste of the tea liquor.
🔹 **Teapot Brewing Method**
1. Boil water and pour it into the teapot to warm it. Fill to 1/2 capacity. After about 30 seconds, pour the water into a fairness pitcher to warm it.
2. Add tea leaves, filling approximately 1/2 to 1/3 of the teapot's height. Cover with the lid and wait a few seconds. Upon opening the lid, you can inhale the "pre-brew aroma."
3. Pour 95°C-100°C boiling water onto the tea leaves in a swirling motion, just enough to cover them. Gently shake the pot to allow the leaves to unfurl. After about 5 seconds, discard the water. This step is known as the "warming rinse," which helps to release the tea's aromatic flavors more quickly.
4. Re-fill with hot water to nine-tenths capacity. Cover with the lid. For the first infusion, pour the tea into the fairness pitcher after approximately 50 seconds. For the second infusion, steep for about 30 seconds. For the third to fifth infusions, increase the steeping time by 30 seconds for each subsequent infusion.
🔹 **Cup Brewing Method**
1. Rinse the inside of the cup with hot water to maintain the temperature for brewing.
2. Spread the spherical tea leaves evenly across the bottom of the infuser, to a height of about 1 to 1.5 cm.
3. Recommended water temperature is 95°C-100°C. Gently pour hot water over the tea leaves.
4. The tea is ready to drink once it has developed its color.
5. Adjust the amount of tea leaves and steeping time according to personal preference.
