The surging soul of Taiwanese cuisine shows the Taiwanese people's love of eating
Taiwanese people's obsession with food should not be underestimated. When you go to the night market, each stall has its own characteristics; when you go to a restaurant, you can choose from a variety of homemade dishes. Each boss has his own insistence, and everything is done according to the steps. New creativity and ideas are incorporated from time to time. Through the act of "eating", Taiwan's character of being warm, hospitable, and open to accepting various cultures is demonstrated.
We use heavy roasted oolong tea and aged osmanthus to make this tea, and add one of the important souls of Taiwanese cuisine - star anise. Star anise is an important spice in Taiwanese stews and braised dishes, and is one of the taste memories we are familiar with since childhood. The fragrance of tea, flowers and spices are intertwined to create an unexpected new taste that is mellow, sweet and full of vitality.

Traditional oriental scenting technique - you can smell the fragrance but not see the flowers
"Scenting" is a traditional oriental floral tea making process that blends the natural fragrance of flowers into tea leaves. Flowers and tea are intertwined and layered. As time goes by, the tea leaves absorb the fragrance of flowers and finally present a unique flavor of tea. Western floral tea is brewed through blending technology, where all the ingredients are brewed together.
The scenting process involves mixing tea leaves with freshly picked flowers, allowing the tea leaves to absorb the floral scent through capillary action. The book Tea Book from the Ming Dynasty states that any fragrant flower can be used for incense. When the flowers are in full bloom, use a paper-covered bamboo cage to separate the two layers. Put tea on the upper layer and flowers on the lower layer. Repeat this process several times and the tea leaves will have the aroma of flowers. When finished, take out the flowers and leave only the tea leaves, which becomes floral tea.
