We focus on highlighting the inherent flavors of the green beans rather than blindly pursuing roast levels.
We begin by testing the beans using our standard roasting method to assess their overall profile. After cupping, we determine the desired flavor direction based on the bean's characteristics. We then review and adjust the roasting curve to find the optimal roast level that best enhances the beans' optimal flavor profile, emphasizing distinct notes, bright acidity, rich sweetness, and overall balance.
