The system involves each country first conducting domestic selections (the National stage), after which each country sends its winning samples to the AFCA annual meeting for international final judging, referred to as the Regional stage. In the final cupping evaluations, using the 2017 edition in which we participated as judges, there were two rounds of cupping.
