Coffee Processes
This refers to the transformation of ripe red cherries into dried green beans. Each processing method has its merits and drawbacks, influenced by the origin's natural environment and specific needs. Consequently, each region adopts suitable processing methods, broadly categorized as follows:
**【Natural / Sundried / Dry Process】**
Also known as natural drying or non-washed processing, this is the most traditional and common method, requiring no water during processing. Originating in Ethiopia, coffee cherries are sun-dried whole before hulling. The seeds remain inside, absorbing flavors from the skin, pulp, and mucilage during prolonged sun exposure, resulting in fuller sweetness, body, and unique aromatic qualities. Coffee producers spread all cherries on drying beds under the sun, which can be patios or raised platforms. Over 3-6 weeks, the coffee ferments, and producers turn them to ensure even drying and prevent spoilage. During this period, sugars and mucilage adhering to the seeds develop flavor and sweetness. After drying, machines separate the dried pulp and skin from the seeds. Natural processed coffees are juicy and syrupy, well worth the effort.
**【Washed / Wet Processed】**
Also called wet processing, this method involves removing the skin and pulp from the coffee cherries before drying. The beans are then fermented in water tanks to remove the mucilage layer adhering to the seeds, followed by washing and drying in the sun or using machines. Washed processing yields a cleaner, crisper cup with a lighter body compared to natural processing. It typically offers brighter flavor profiles and the essential bright acidity found in specialty coffees, with fruity notes that are often more distinct.
**【Honey / Pulped Natural / Semi-dry Process】**
The honey process is a hybrid method combining aspects of natural and washed processing, first developed in Costa Rica. Similar to the washed process, the skin and pulp are removed, but instead of fermentation tanks, the mucilage layer is retained and sun-dried. The term "honey" does not refer to added honey but to the sticky mucilage layer, which feels like honey, hence the name. The mucilage layer retains a high proportion of sugars and acids, which is key to the honey process. The amount of mucilage left determines the sweetness.
