Coffee originated in Ethiopia, Africa. Suitable coffee-growing regions worldwide are located between 25 degrees north and south latitude, encompassing the equator. Botanically, the coffee tree belongs to the evergreen genus Coffea of the Rubiaceae family. Coffee beans are the seeds of the coffee tree's fruit, with three main species: Arabica, Robusta, and Liberica. World-class specialty coffees are derived from the Arabica species, which itself comprises various subspecies resulting from evolution, hybridization, and mutation.

Coffee Processes
This refers to the transformation of ripe red cherries into dried green beans. Each processing method has its merits and demerits, influenced by the natural environment and specific needs of the origin. Consequently, each region employs processing methods best suited to its conditions, broadly categorized as follows:
**【Natural Process】(Sundried / Dry Processed)**
Also known as natural drying or non-washed processing, this is the most traditional and common method. Water is not used during processing. Originating in Ethiopia, harvested coffee cherries are sun-dried before hulling, with the bean still inside. During prolonged sun exposure, the beans absorb flavors from the skin, pulp, and mucilage, resulting in enhanced sweetness, body, and the potential for unique aromas. Coffee producers spread all cherries on drying beds, which can be patios or raised platforms. Over 3-6 weeks, the coffee ferments, and producers turn them for even drying and to prevent spoilage. During this period, the sugars in the fruit and the mucilage adhering to the seed develop flavor and sweetness. After drying, machines separate the dried pulp and skin from the seed. Natural processed coffees are juicy, syrupy, and well worth the effort.
**【Washed Process】(Wet Processed)**
Also called wet processing, this method involves removing the skin and pulp from all coffee cherries before drying. The beans are then submerged in fermentation tanks to break down the mucilage layer adhering to the seed, followed by washing with water and drying under the sun or by machine. Washed process coffees offer a cleaner, crisper taste with a lighter body compared to the natural process. They typically exhibit brighter flavor profiles and the distinct acidity essential for specialty coffee. Fruit-like notes are still present, and flavors are usually easier to discern.
**【Honey Process】(Pulped Natural / Semi-dry Process)**
The honey process is a hybrid method, combining elements of the natural and washed processes. It was first developed in Costa Rica. Similar to the washed process, the skin and pulp are removed, but instead of using fermentation tanks, the beans are sun-dried with the mucilage layer intact. The term "honey" does not refer to added honey; rather, it signifies the sticky nature of the mucilage layer, which feels like honey, hence the name. The mucilage layer retains a high proportion of sugars and acids, which is key to the honey process. The amount of mucilage left influences the sweetness.
