Sanchette's Classic flavor Butterfly Crisp is an adaptation of a recipe by French master Pierre Hermé. While the ingredients are simple, the creation process is exceptionally intricate. The dough, made from flour, natural butter, and water, is rested in the refrigerator for half a day before being completely enveloped in fermented butter. Each rolling and folding session requires the dough to be chilled until thoroughly relaxed. This process is repeated six times with a threefold fold, ultimately achieving the 730 layers of our signature crisp. After careful shaping and a sprinkle of irresistible sugar crystals, they are baked at a high temperature of 250°C, allowing each crisp to puff to perfection.
