Instead there is a dense, fine sponge of tiny pores — hundreds per square centimetre, pale yellow-white when fresh and bruising very slightly blue where pressed. Beneath that sponge layer is where the spores form and fall, invisibly, in their millions. Most people slice a porcini without pausing to look at the underside, so I wanted to draw it in a way that made the underside the first thing you noticed. The stem is the other argument. Thick, pale, almost as substantial as the cap, and traced with a faint raised network — like the veining in old marble, or the reverse of a leaf. In Italian, porcini means little pigs, for the stout, round-bellied stems. In France they are cèpes; in Britain, penny buns for the brown, bun-shaped caps. Every country has its own name for the mushroom that anchors an autumn forest kitchen. They grow under oak, chestnut and conifer, in quiet partnership with the roots. You find them on the same slopes year after year, in the same loose constellation of spots — the knowledge of exactly where tends to pass carefully through families. A good porcini patch is not something shared casually. The peak is brief: a few days after rain in early autumn when the temperature is right, and then they are over, or the slugs have found them first.
