We don't blindly chase roast levels. Our primary goal is to showcase the inherent flavors of the green coffee beans.
We begin by testing the beans using our standard roasting method to understand their overall profile. Following a cupping session, we determine the desired flavor direction based on the bean's unique characteristics. After reviewing the roasting curve, we adjust and refine it to find the optimal roast level for peak flavor expression. Our emphasis is on distinct flavors, bright acidity, rich sweetness, and overall balance.
