In taxonomy they are called decurrent false ridges; they look more like the pleats of a skirt than the pages of a book. This is the one detail that separates a real chanterelle from every lookalike in the forest, so it is the detail I most wanted to get right. This is a mushroom you cannot farm, only find. Cantharellus cibarius lives in a close underground partnership with the roots of oak, beech and conifer — a relationship that cannot be replicated in a growing bed or a laboratory. It appears in midsummer and lingers into autumn, pushing through leaf litter in small scattered groups: easy to miss until suddenly you see five, then ten, then a whole slope of them catching the low September light. There is the scent too: faintly fruity, often described as apricot or dried apricot, with something earthy underneath it. It is one of the most distinctive smells in the European forest in late summer, and very difficult to describe to someone who has not yet encountered it. The French call it girolle and cook it slowly with butter and fresh tarragon. In Germany it is Pfifferling; in Italy, gallinaccio. The false ridges are lit from above so their shallow depth reads clearly. The colour took longest: that particular egg-yolk yellow, with the slightly deeper orange at the wavy margin, is the whole identity of the thing from a distance.
