**Geisha/Gesha**
Geisha Coffee, once rated as one of the "Top Ten Most Expensive Coffees in the World" by Forbes, can be said to be a well-known legend of specialty coffee. There is significant confusion regarding the geisha variety, as there are several genetically distinct plant types known as geisha, many of which have similar geographical origins in Ethiopia. A recent genetic diversity analysis conducted by the World Coffee Research Center confirmed that the descendants of the T2722 variety grown in Panama are unique and consistent. Coffee Processes

Each processing method has its own advantages and disadvantages, and is affected by the natural environment and needs of the production area. Therefore, each production area has its own suitable processing method. This batch uses respectively Sun-drying or water-washing treatment methods are briefly described below.
**【Sun exposure method】Natural / Sundried / Dry Processed**
Also known as natural drying method and non-water-washing treatment method, it is the most traditional and common method of processing. No water is used during the processing. Originating in Ethiopia, the collected coffee berries are dried in the sun and then shelled. The seeds are still inside. During the long exposure process, they absorb the flavor of the peel, pulp and pectin, leaving The sweetness and body of the coffee are fuller, and it is easy to create a unique aroma.
Coffee producers place all their fruit in the sun on drying beds, which consist of terraces or raised drying tables. Over the course of 3-6 weeks, the coffees ferment and producers turn them to dry evenly and prevent spoilage. During this time, the sugars in the fruit and the pectin attached to the seeds develop flavor and make them sweeter. After the coffee is dried, a machine is used to separate the dried pulp and peel from the seeds. Sun-cured coffee is juicy, syrupy, and well worth the effort.
**【Water washing method】Washed / Wet Processed**
Also known as the wet processing method, before drying, all coffee fruits will have their peel and pulp removed, and then soaked in water for fermentation in a fermentation tank to remove the pectin mucosa remaining on the seeds. They will then be washed with water and dried with Sunlight or machine drying.
The washed process has a cleaner and crisper taste than the sun-dried process. The body is lighter than the sun-dried process. It usually has a brighter flavor expression. It has the rich acidity necessary for fine coffee, and it also has fruits. tonal flavors and are often easier to distinguish.
