**Add a spoonful of mature flavor to the Mid-Autumn Festival table**
The soul of Japanese fermentation culture is "koji"—a koji mold passed down from generation to generation in each family, combined with local rice and water. This koji is used to make miso, amazake, shiokoji, soy sauce, mirin, and other seasonings. Because each long-established shop has its own unique heritage, everyone has a personal favorite: "I've been eating it since I was a kid, the one right next door is the best." This time, the Time Research Institute will show you how to brew your own unique "live miso" using koji, domestic soybeans, and sea salt, allowing you to explore the secrets of miso!
