Sometimes I wonder, if they all claim to be Yirgacheffe, why the price for a half-pound can range from 150 to 650!
Every shop says their quality is excellent; how can one distinguish the good from the bad?
I don't know how others operate, but I can only honestly explain HOFFE's practices to everyone.
✅ Generally, smaller quantities of green beans mean higher prices. However, due to the higher cost, they are usually vacuum-sealed, offering better preservation and freshness. These are typically the latest seasonal beans. Therefore, HOFFE insists on a diverse, small-batch approach.
✅ HOFFE relies on the human eye for sorting defective beans. We sort both green and roasted beans once each to remove any defects. However, I must also mention that if one is willing to invest in high-quality green beans, the proportion of defects will be significantly lower. If one is merely seeking a low price, the entire bag might be filled with defective beans.
✅ Nitrogen flushing in packaging reduces oxygen activity, slowing down oxidation. However, oxygen is still present. HOFFE uses "oxygen absorbers" which remove internal oxygen, creating an anaerobic state. This significantly inhibits fungal growth and achieves food preservation. An anaerobic environment is currently a relatively effective method for slowing down coffee oxidation. The downside is the higher cost, increasing overall expenses!
✅ Coffee roasting machines require frequent cleaning to prevent the buildup of residue. Sometimes the burnt taste isn't due to dark roasting but from accumulated burnt beans inside the machine. That's why Hoffe cleans every 3 months and performs a deep clean every six months.
✅ Although HOFFE COFFEE is a small establishment, we maintain NT$12 million in product liability insurance annually. This is not only a responsibility towards our products but also a guarantee for our consumers. The drawback, once again, is the additional cost!
As the saying goes, people will do business even if it means sacrificing profit, but no one does business at a loss. Businesses open to operate, and there are no unprofitable ventures. Therefore, low prices come with low-cost practices, and high prices come with high-standard commitments. HOFFE doesn't dare to presumptuously claim to be a top-tier establishment, so I don't have the courage to set excessively high prices. HOFFE prefers to adopt a grounded approach with consistent quality, sharing our coffee and design creations step by step. We hope that customers who have purchased our products, if they appreciate them, will spread the word about HOFFE, allowing more people to discover and fall in love with our coffee products.
This is the philosophy behind my management of HOFFE. While it may seem old-fashioned, it brings me peace of mind. I hope that when you purchase HOFFE products, you can also enjoy your coffee with peace of mind.

Medium Roast, Medium-Deep Roast: Recommended 85-88°C
Dose: 20 grams (Medium Grind, Baratza Grinder Setting 4-4.5)
Total Volume: 300g water

Step 1: Add 40g water, pre-infuse for 30 seconds
Step 2: Pour 120g water in a spiral motion from the center outwards, aiming for a flow time of approximately 1 minute
Step 3: Pour 80g water in a spiral motion from the center outwards, with a faster pour
Step 4: Pour 60g water in a single-point pour in the center, with a gentle and slower stream
Overall extraction time: approximately 2 minutes
