A kitchen knife with a distinctive appearance, it is very similar to a Santoku and is also a versatile kitchen tool. Once as popular as the Santoku, the Bunka knife has become less common in recent years.
The main difference between a Bunka knife and a Santoku lies in the tip. The Santoku's tip curves downwards, while the Bunka knife's tip features a straight, angled cut. This design also makes it more efficient for trimming meat.
What is Damascus steel?
Originating from Wootz steel in India, it was smelted by Syrian artisans. Through the medieval Crusades, this precious sword steel was introduced to the European world, symbolizing strong and resilient blades.
Miyako uses AUS8 with a hardness of HRC58.5 as the core material, reinforced on both sides with 8 layers each of SUS410 and SUS430 stainless steel in a cross-composite process, creating a total of 33 layers, each with its own unique pattern.
