Botanically, the coffee tree is an evergreen in the Rubiaceae family, subgenus Coffea. Coffee beans are the seeds of the coffee tree's fruit, with three main species: Arabica, Robusta, and Liberica. World-class specialty coffees all come from the Arabica species, and within Arabica, there are various subspecies that have evolved, hybridized, or mutated.

Coffee Processes
This refers to the process of transforming ripe red fruit into dry green beans. Each processing method has its pros and cons, influenced by the origin's natural environment and different demands, so each origin has a suitable processing method. Broadly, they are as follows:
**【Natural Process】Natural / Sundried / Dry Processed**
Also known as natural drying or non-washed processing, this is the most traditional and common method. Water is not used during the processing. Originating in Ethiopia, harvested coffee cherries are sun-dried and then de-pulped. The bean remains inside the cherry, absorbing flavors from the skin, pulp, and mucilage during the extended sun-drying period, resulting in fuller sweetness and body, and easily developing unique aromas.
Coffee producers lay all the cherries on drying beds under the sun, which can be patios or raised drying tables. Over 3-6 weeks, the cherries ferment. Producers turn them to ensure even drying and prevent spoilage. During this time, sugars within the fruit and the mucilage attached to the seed create flavor and make them sweeter. After the coffee is dried, machines separate the dried pulp and skin from the seed. Natural processed coffees are juicy and syrupy, well worth the effort involved.
**【Washed Process】Washed / Wet Processed**
Also called wet processing, before drying, all the coffee fruit is depulped and de-meated, then soaked in fermentation tanks to remove residual mucilage from the seed. It is then washed with water and dried in the sun or by machine. The washed process results in a cleaner, crisper mouthfeel compared to the natural process. The body is lighter, typically offering brighter flavor expressions with the rich acidity essential for specialty coffee. It still retains fruity notes and is usually easier to distinguish.
**【Honey Process】Honey / Pulped Natural / Semi-dry Process**
The honey process is a method that combines elements of the natural and washed processes. It was initially developed in Costa Rica. Like the washed process, the fruit pulp and skin are removed, but instead of using fermentation tanks, the mucilage is left on and sun-dried. Honey processing does not involve adding honey; the term "honey" refers to the very sticky mucilage layer, which feels like honey, hence the name "honey process." The mucilage layer retains a high proportion of sugars and acids, which is key to the honey process; the amount of remaining mucilage determines the sweetness.
