For the cookie base, "Yun Duo" uses Isigny butter from France and eggs from our own farm. The cookie base contains no additives. The unique aroma of fermented butter after baking, combined with the fragrance of eggs, makes the cookie base delicious on its own! For the royal icing, we use USA Wilton egg white powder, which eliminates any eggy taste or concerns about raw eggs. While it's possible to make royal icing with natural egg whites, we do not use them because the average baking temperature for royal icing is 35°C, which does not fully cook the egg whites. Some individuals may be hesitant to consume undercooked egg whites. Therefore, using egg white powder is the best choice for safety and a longer shelf life.
