Mirazu, meaning "to gaze afar at Tarrazu," owes its advantage to the microclimate at the highest point of the Tarrazu region. Mr. Sanches, dedicating his energy to researching machinery and coffee, earned him the nicknames "Dr. Machine" and "Sun-Dried Bean Expert" from local farmers. He believes that coffee quality begins with the tree itself, stating that if the cultivation yields exceptional quality, machines become unnecessary for sorting. Over the years, his coffee quality has continuously improved, yielding remarkable results in his research.
Cataje is the estate's blend, featuring varieties such as Geisha, SL28, Caturra, and Catuai. This particular lot underwent special care and a Raisin Honey process, with the beans resting in rum barrels for three months. The flavor profile presents strawberry notes and a rich fermentation character, indicative of a remarkably sweet processing method.
