Honestly, I'm surprised myself... Despite originating from a familiar region, varietal, and processing method, it achieves such a timeless elegance. This is a coffee that elevates the ordinary into the extraordinary, truly worth experiencing.
▶ Tri-UP x Kasuya Origin Project:
Since 2017, Tri-Up has engaged in numerous collaborations with Tetsu. Tetsu, a World Hand Drip Champion, carries no airs of celebrity. Instead, he is humble, open-minded, and eager to try new things.
Starting in 2018, Tetsu and Tri-Up began discussions about deepening their involvement in coffee-producing regions, leading to various processing experiments during the 2019 harvest season. Integrating Tetsu's insights with the practical experience from the origin farms, we are finally able to share the results this harvest season (20/21).
Our understanding is that Tetsu's initial goal wasn't to design a specific flavor profile or outcome. More importantly, he hoped to learn through testing how processing methods could enhance the coffee's taste.
If the process goes smoothly, and we can maintain long-term partnerships with the producing regions, creating more ideal income and returns, while offering consumers greater coffee value and experience – that would be wonderful.
The project is now in its fifth year! I am personally very satisfied with this coffee.
