The truss is the thing — not the single tomato but the whole hanging branch with its varying stages of ripeness, from pale green to deep red. The tomato is a South American plant — native to the western Andes, first domesticated probably in Mexico — that arrived in Europe in the sixteenth century and spent nearly two hundred years being regarded as ornamental but inedible, poisonous even, before it became the cornerstone of Italian and Mediterranean cooking. It was the poor and the southern who adopted it first, in Naples and southern Spain. The cherry tomato is considered closest in form to the wild tomato — the plant at its most itself: small, prolific, flavour-intense, grown on a truss the way nature arranges it.
