I had been looking for chopsticks that were thin and light, and made of natural materials for both the body and the finish, since they would touch the mouth. Wooden chopsticks tend to be thick and chunky. If they were made too thin, they could warp, and you would need to use a hard, heavy wood, which made them difficult to hold. They were also expensive. With lacquer-coated chopsticks, some genuine lacquer chopsticks have more than half their volume made up of lacquer. This also made them heavy.
After continuing my search, I finally found bamboo chopsticks.
Bamboo is a strong and flexible material. It can be split into very thin strips along the direction of the fibers. It also has a unique flexibility that makes it easy to pick food from.
Kyoto craftsmen grow bamboo in the bamboo groves of Nagaokakyo, cut it down, dry it in the sun for a long period of time, shave it, and finish it with lacquer.
The chopsticks are square in shape, but as you go towards the tips, they become thinner and thinner, something that would be difficult to achieve with wood. The corners are chamfered, so they don't feel rough when you hold them.
The wood is thoroughly dried at the material stage, and after it is sawn and split, it is dried under heat. When sawing, chopsticks are always paired together so that if any movement occurs due to changes in temperature and humidity, they will move in the same direction, reducing interference with use. Warping can occur during production, such as during the heat process, so if this occurs, the other chopstick is removed from the chopsticks. This is a very tedious process of selection and work, but it ensures that the tips of the chopsticks fit together perfectly, resulting in a pair of beautiful chopsticks that can be used for a long time.
The chopsticks made in this way are finally given a finish with lacquer, which blends with the color of the lacquer to give them a deep luster and color. The lacquer coating makes the chopsticks more resistant to water and oil, making them much easier to handle than chopsticks without a coating.
