During honey processing, the cherry fruit is dried on the seed. This gives the final bean a totally transformed flavour. As the cherry dries, it is natural sugars and pectin ferment imparting the sweet and complex flavours you will taste in the coffee. The coffee offers a lot of sweetness and flavours while remaining clean.
Good body, fruity, bright acidity with a clean and crisp taste.
