In 2016, he traveled to Japan to apprentice under renowned Spanish cuisine authority Yukio Konishi in Osaka. After returning to Taiwan, Jacky started his own business, combining the culinary techniques he acquired abroad with local ingredients to successfully launch his own Spanish farmhouse-style restaurant. Within less than a year and a half, Jacky not only expanded his business but was also featured on the popular food program "Super Taste." He was then invited by the boutique tea brand TWG to serve as the Head of Pastry for their 48 locations across the Asia-Pacific region, stationed at their Singapore headquarters. We named this cookie "Salted Caramel" because the base is crafted from the savory notes of Yilan Sanxing scallions, paired with a salted caramel filling—much like the moment two people meet and dance to music in the silence of the night. The amber luster and silky texture of the caramel, combined with an alluring sweet-and-savory profile and delicate fragrance, evoke the enchanting, blissful feeling of a vibrant dance. "Caramel and sea salt are like old friends, perfectly in tune." The combination of scallions and sea salt offers a saltier, more vibrant flavor than common salt.
