The Shantawene Drying Station in Sidama’s Bensa district receives cherries from surrounding smallholders. Despite steep terrain in parts of the station, the dedicated workers process the cherries with care. The area’s cool climate allows for a slow, 20-day drying period with frequent turning, ensuring high quality and complexity.
