Sichuan Peppercorns x Zhejiang Huzhou Zongzi 💥 A first-ever collaboration between Liu Lao Lao and Hu She Yu Wei Restaurant, a three-time Michelin Bib Gourmand recipient!
Huzhou zongzi originates from Zhejiang province. It features glutinous rice seasoned with sauce, wrapped in a long shape with marinated fillings. Cooked by boiling for about two and a half hours, it has a softer, stickier texture than other zongzi. The glutinous rice, infused with the sauce, offers a savory, dense flavor with a rich rice aroma. Huzhou zongzi is meticulously crafted from the outside in, renowned for its simple yet delicate taste, earning it the reputation of "King of Zongzi."
This time, we've combined the famous Zhejiang zongzi with Sichuan peppercorns. After meticulous research and several adjustments to the recipe proportions, we've created crispy, numbing Sichuan peppercorn flakes that are blended with the traditional Huzhou zongzi method of soaking glutinous rice in sauce. Marinated overnight to perfection, the intense aroma and the numbing sensation that tingles the lips are perfectly integrated into the soft, round glutinous rice and carefully selected ingredients, resulting in a tender texture. It's an immediate delight for your taste buds, a must-have for any gourmand.
💡 Two flavors to enjoy different deliciousness!
"Sichuan Peppercorn Chicken Leg Zongzi"
Finely ground crispy Sichuan peppercorns are mixed into our exclusive sauce, then used to marinate fresh, tender chicken leg meat. Hand-kneaded and marinated for 12 hours to ensure every inch of the meat is infused with flavor. Unwrapping the zongzi releases a captivating aroma. With the first bite, the numbing sensation of Sichuan peppercorns blossoms in your mouth, perfectly balanced with the tender chicken leg, creating a delightful dance between peppercorns and chicken.
"Abundant Vegetarian Zongzi" (Five-Spice Vegetarian)
Shredded tofu skin and shiitake mushrooms are rehydrated, then lightly fried with chestnuts for color. This is followed by stir-frying with crispy Sichuan peppercorns, dried chili peppers, star anise, and bay leaves to release their fragrance. It's then simmered over low heat, with ingredients cooked for varying times according to their characteristics to ensure they are fully flavored.
In addition to the selected shredded tofu skin, which is a soy product, all other ingredients are organic/pesticide-free whole foods, including New Community shiitake mushrooms and king oyster mushrooms, #57 sweet potatoes, Beigang peanuts, Japanese golden chestnuts, lotus seeds, mung beans, and oats. Each zongzi is packed with abundant fillings, with a hint of numbing Sichuan peppercorn flavor in every bite.
