**Coffee Roasting Philosophy**
We don't blindly chase roast levels. Our primary goal is to present the inherent flavors of the raw coffee beans.
We begin by testing the raw beans using our standard roasting method to assess their overall profile. Following a cupping session, we determine the desired flavor direction based on the bean's unique characteristics. After reviewing the roasting curve, we adjust and refine it to find the optimal roast profile that best enhances the bean's flavor. We emphasize distinct flavors, bright acidity, rich sweetness, and overall balance.
