The colour of the olive in this state is one of the specific colours of the Mediterranean itself: grey-green on the upper surface of the leaf, almost silver-white on the underside, a colour that has been calibrated over millions of years to reflect maximum light in high heat and preserve moisture. In the middle of an August afternoon the leaves turn and flash silver in the slightest breeze, and the whole hillside moves. The olive tree is one of the oldest cultivated plants on earth.
