After baking, the Sakura Shrimp's aroma is richer, the umami pops out and the texture is very crunchy, making it a good combination with the sweet crispy palmier, and the flavours are rounded off with creamy salted egg yolk. **Salted egg sourced from local expert Hoi Yuen Egg Shop**, instead of red clay which is commonly used, Hoi Yuen uses wood ash in the fermentation, that results in sweeter, creamier and more fleshy yolk.
