It is to remove the peel and pulp of the red cherry fruit with a machine, put the cherry fruit containing the pectin layer into the fermentation tank for about a day, wash the mucus with water after the fermentation, and then dry it in the sun to a water content of about 30% ~ 35% , you can remove the coffee bean shell.
The outer shell of the coffee beans is removed in a semi-dry and semi-wet state, revealing the unique dark green color of the beans themselves.
The dehydration treatment increases the body of the coffee and reduces the acidity, making it a characteristic Mandheling coffee.
