Coffee Processes
This refers to the process of transforming ripe red cherries into dried green beans. Each processing method has its merits and demerits, influenced by the natural environment of the origin and local needs. Consequently, each region adopts suitable processing methods, briefly described below.
**【Natural / Sundried / Dry Process】**
Also known as natural drying or dry processing, this is the most traditional and common method, requiring no water. Originating in Ethiopia, harvested coffee cherries are dried in the sun before hulling. The seeds remain inside, absorbing flavors from the husk, pulp, and mucilage during prolonged sun exposure, resulting in fuller sweetness, body, and unique aromas.
Coffee producers place all cherries on drying beds in the sun, which can be patios or raised platforms. Over 3-6 weeks, the coffee ferments, and producers turn them for even drying and to prevent spoilage. During this period, sugars within the fruit and the mucilage attached to the seeds create flavor and enhance sweetness. After drying, machines separate the dried pulp and husk from the seeds. Natural processed coffees are juicy and syrupy, well worth the effort involved.
**【Washed / Wet Process】**
Also known as wet processing, this method involves removing the skin and pulp from all coffee cherries before drying. The cherries are then soaked and fermented in tanks to remove residual mucilage from the seeds, followed by washing and drying in the sun or by machine.
Washed processing results in a cleaner, crisper cup compared to natural processing. The body is generally lighter, with brighter flavor profiles and the vibrant acidity essential for specialty coffee. Fruit-like notes are still present, and the flavors are typically easier to distinguish.
**【Honey / Pulped Natural / Semi-dry Process】**
The Honey process is a hybrid method combining aspects of natural and washed processing, first developed in Costa Rica. Similar to the washed method, the skin and pulp are removed, but instead of fermentation tanks, the coffee is sun-dried with the mucilage layer intact. The term "honey" does not refer to added honey; rather, it describes the sticky mucilage layer, which is as viscous as honey, hence the name. The mucilage layer retains a high proportion of sugars and acids, which is key to the honey process. The amount of mucilage left behind determines the sweetness.
