Botanically, the coffee tree is an evergreen belonging to the Rubiaceae family, genus Coffea. Coffee beans are the seeds of the coffee tree's fruit. There are three main species: Arabica, Robusta, and Liberica, which cannot interbreed to produce new subspecies. The world's specialty coffees originate from the Arabica species, which itself has evolved into various subspecies through hybridization and mutation.
Geisha/Gesha Varietal
Often cited as one of the "World's Most Expensive Coffees" by Forbes, Geisha coffee is a legendary name in specialty coffee circles. There is significant confusion surrounding the Geisha varietal, as multiple genetically distinct plant types are referred to as Geisha, many with similar geographical origins in Ethiopia. Recent genetic diversity analysis by World Coffee Research has confirmed that the T2722 variety cultivated in Panama and its descendants are unique and consistent. When managed well at high altitudes, it correlates with exceptionally high cup scores and is renowned for its delicate floral, jasmine, and peach-like aromas.
Arabica Bourbon Varietal
One of the closest varieties to the original species, discovered on Reunion Island (formerly known as Bourbon) near Madagascar. Bourbon possesses its own distinctive characteristics, offering excellent taste akin to fine wine with a sweet finish, similar to Typica. It can be distinguished from Typica by the leaves and bean appearance; Bourbon leaves are broader, and the cherries are smaller and grow more densely, resulting in beans that are generally smaller and rounder than Typica. In Kenya and Tanzania, artificial crossbreeding of Bourbon descendants resulted in new varieties like "SL28" and "SL34," which are known for their superior flavor profiles. While Bourbon yields are higher than Typica, their harvest cycle is the same two years, classifying it as a low-yield variety.
Arabica Catuai Varietal
Catuai was developed by the Agronomic Institute of Campinas (IAC) in São Paulo, Brazil, as a crossbreed between the high-yielding Mundo Novo and the dwarf Caturra. This variety offers significantly higher productivity compared to Bourbon, partly due to its smaller plant size, allowing for closer planting distances and nearly double the planting density of Bourbon.
The plant's structure also makes it more manageable for pest and disease control. It is primarily known for its vigorous growth and compact stature, with a more open tree form than Caturra. It exhibits excellent resistance to coffee leaf rust. The name "Catuai" originates from the Guarani word "Mundo Novo," meaning "very good." As it is not a pure line variety, it exists in both yellow and red berry forms.
Its flavor profile is characterized by bright, sharp, and full acidity. The sweetness is similar to Caturra, with less astringency and a well-balanced taste, overcoming the shortcomings of poor flavor and texture.

Coffee Processes
This refers to the method of transforming ripe red fruit into dry green beans. Each processing method has its pros and cons, influenced by the local natural environment and specific demands. Therefore, different regions favor different methods, generally categorized as follows:
**Natural / Sundried / Dry Processed**
Also known as natural drying or non-washed processing, this is the most traditional and common method, requiring no water. Originating in Ethiopia, whole coffee cherries are sun-dried and then de-pulped, leaving the seeds inside. During the extended sun-drying period, the beans absorb flavors from the skin, pulp, and mucilage, resulting in fuller sweetness, body, and distinct aromas.
Coffee producers spread all cherries on drying beds, which can be patios or raised platforms. Over 3-6 weeks, the coffee ferments, and producers turn them to ensure even drying and prevent spoilage. During this time, sugars and mucilage adhering to the seed develop flavor and sweetness. Once dry, machines remove the dried pulp and skin from the seeds. Natural processed coffees are juicy and syrupy, making the effort worthwhile.

**Washed / Wet Processed**
Also called wet processing, this method involves removing the fruit's skin and pulp before drying. The beans are then fermented in water tanks to remove the mucilage layer, followed by washing with water and drying either in the sun or by machine.
Washed processing typically yields a cleaner, crisper cup with a lighter body compared to the natural process. It often presents brighter flavor profiles and the essential bright acidity characteristic of specialty coffee. Fruity notes are still present, and the flavors are generally more distinct.

**Honey / Pulped Natural / Semi-dry Process**
The honey process is a hybrid method combining elements of natural and washed processing, first developed in Costa Rica. Similar to the washed process, the fruit's skin and pulp are removed, but instead of fermentation tanks, the beans are sun-dried with the mucilage layer intact. "Honey" refers not to added honey but to the sticky mucilage layer, which is as viscous as honey, hence the name. This mucilage layer retains a high proportion of sugars and acids, which is crucial for the honey process; the amount of mucilage left determines the sweetness.
The flavor profile of honey processed coffee falls between natural and washed. It produces a unique cup that is cleaner than natural processed coffee, with a richer syrupy sweetness due to the remaining mucilage, and more pronounced acidity than washed, yet with a fuller body than washed.

**Anaerobic Fermentation**
Coffee cherries are placed in airtight tanks filled with carbon dioxide, creating an oxygen-free environment. The low temperature slows down the decomposition of mucilage sugars, and the pH drops more gradually, extending the fermentation time to develop enhanced sweetness and a more balanced flavor.
