Koito-yaki has been around since the Edo period, and the basic glaze used is a traditional brown glaze with a slightly rough texture called Irabo glaze. This color and texture are due to the kiln owners using raw materials from nature, such as the ashes of burned plants and red clay from all over Hida, and combining them with traditional pigments. After firing, the clay is solid and the glaze is dense, making it difficult for food smells to adhere to it. Due to the characteristics of the glaze, it is a little rough when used for the first time, but as the number of uses increases, the glaze will gradually become smooth and warm, and the color will change slightly.
