About the design:
We wanted to create a chocolate cake that was understated yet fully showcased the luxurious aroma of pure cocoa!
I don’t want to use spices and ingredients that stimulate the taste buds at first but become more and more disgusting the more you eat them and are of no benefit to the human body. I hope that the delicious chocolate cake will be pure and beautiful, without leaving any unpleasant smell in the mouth, and can be enjoyed for a long time without being too sweet. It is the kind of chocolate flavor that people gradually fall in love with, with a light but strong aftertaste.
Therefore, we improved the traditional French classic chocolate cake recipe to make the chocolate cake more suitable for Taiwanese tastes. In addition to reducing the sweetness, we also need to maintain the rich aroma of cocoa. We use a sufficient amount of Saint James rum (Hemingway's favorite...) to maintain the cocoa aroma and increase the overall moistness. As for the most important cocoa raw material, we tested many brands and finally chose Valrhona chocolate which has the best performance and is the most stable as the material.
About food feeling:
ROCOCO Opus 1 is a solid chocolate cake made with a high proportion of top-grade Valrhona Tanori 64%, using a special natural baking technique to keep the cake moist and light. The cocoa plantation is produced in the Dominican Republic. Located at the intersection of subtropical climate and strong hurricanes, its flavor has the aroma of yellow fruit and exudes a fresh citrus flavor. The dry and caramelized fruit aroma in the latter part is paired with the chef's homemade rum grapes, which makes it more layered and mellow without being greasy! How to save:
Please keep Valrhona in the freezer and thaw it at room temperature, about 5-15 degrees C, for the best taste.
If the Valrhona has been cut but not finished, put it in the freezer together with the outer box and must be eaten within 3 days
Uncut, can be stored in the freezer for 7-10 days
Drink pairing suggestions:
Recommended to pair with light coffee, whiskey, tea, and orange juice.
