BUNKA
Bunka is a santoku with the kiritsuke tip and slightly longer. Kiritsuke tip is great for scoring the surface vegetables, fish, chicken and meat. Scoring tenderizes the skin for pickling vegetables and helps the brining process speed up by opening the interior to the brine. For meant, fish and poultry skin scoring helps render the fat and gives the cook more control over the cooking process.
DAMASCUS HAMMERED STEEL
Each stainless steel knife blade has a core of premium AUS10 steel with 45 layers of Damascus steel folded over top. The mark of the craftsmen is left one by one as the blades are finished with a unique hammered finish called tsuchime. The hammered finish also helps food to release from the blade while cutting. High polish damascus steel blades are laser thin for precise cutting. Easy to clean stainless steel without the high maintenance rust issues of traditional carbon blades.
KEYAKI FUKI URUSHI
Keyaki - called Zelkova in English - is a deep grained Japanese wood rich in oils. Keyaki is a favorite for wood craftsmen and is long lived. Urushi is created by first harvesting tree sap which it can be used clear, darkened or colored. Fuki Urushi refers to the clear and darkend lacquers. When applied to keyaki the beautiful grain shines through a warm, dark hue akin to rosewood. We have replaced rosewood with Keyaki Fuki Urushi handles as part of KIKUSUMI sustainable project.
ERGONOMIC HANDLE
Octagonal wa handles are ideal for both left and right hand cooks. They mirror the contours of the hand which is why they have superior ergonomics. Flexible grip holds are another reason - whether straight cuts or peeling ‘katsura’ cutting the octagonal handle beats the western grip handles on skill performance. Ergonomic & ambidextrous make them the ideal handle crafted by Kikusumi artisans.
