Cocoa beans from Neipu, Pingtung, are harvested and then fermented for about five days before being sun-dried. Once the flavors are fully developed, they are slowly roasted at low temperatures. The oil is extracted, and the beans are ground into coarse cocoa powder. The cocoa flavor is natural and not overly bitter, possessing a fruity richness from fermentation, unlike commercially alkalized cocoa powder.
Because Pingtung's natural cocoa powder is not as intensely flavored as alkalized cocoa powder, three times the amount is used. It is blended with milk, butter, sugar, and maltose, then simmered into a sauce that coats the puffed rice.
