Origin of Clear
Legend has it that in the 18th century, because traditional Bordeaux winemaking required egg whites for clarification, winery owners donated the unused egg yolks to a religious group called the "Little Sisters of the Poor," and the nuns used these egg yolks to make cakes. In addition, Bordeaux was an important trading port at the time, and it was easy to find vanilla and rum, so these ingredients became the main ingredients of claret.
During the French Revolution, the nuns were persecuted and the production of this pastry was stopped for a while until it was resumed in 1830. There is still a Keroli Association in the Bordeaux region of France that follows traditional recipes to make this pastry technique.
In addition, there are also reports that it is no longer possible to trace how the crepe was actually invented. Legend has it that it was invented when ships were unloading flour at the port of Bordeaux, but some people believe that it originated in the monastery called Annonciades in the 18th century. However, the desserts at that time were not exactly the same as they are today. It was only after the nuns in the monastery re-studied and adjusted them that the prototype of today's crepe was presented.
