``Junmai Fuji Vinegar'' is made using a manufacturing method that has not changed since its founding in 1896. The raw materials are pure rice vinegar made only from rice grown without using pesticides during the cultivation period in the mountain village of Tango, Kyoto, and underground water gushing from the mountains.
Using the rice, the chief brewer prepares moromi (moromi), which is then used to create vinegar using the ancient method of static fermentation and long-term aging. This is a traditional method that takes over two years to make, starting from growing the rice in-house.
In addition, each liter of vinegar uses 200g of rice, which is five times the amount of rice that can normally be labeled as ``rice vinegar'', giving it a strong and rich flavor.
It adds depth and richness to your dishes.
