**Totoro Forest. Chinchiquilla**
**Everything is born from the love for the coffee forest**
The original name of "Chinchilla Forest" is CHINCHIQUILLA. The coffee beans come from a cooperative project between local small farmers and Caravela, which aims to improve the quality of local boutique coffee beans and promote sustainable agricultural development. Many of the farmers participating in the program are second or third generation, from the initial 18 producers to 30 smallholders by 2024, all of whom are committed to environmentally sustainable farming methods.
In the Camarca region, an important environmental conservation corridor is surrounded by the Chaupe, Cunía and Chinchiquilla forests. This cloud forest not only has an amazingly rich biodiversity, but also plays an important role in the ecological environment of the region.
Precious coffee forests provide delicious coffee beans, and coffee farmers, while protecting the environment, try their best to strike a balance between supply and demand in nature by implementing agroforestry systems and obtaining relevant natural farming certifications. "Totoro Forest" was born out of the small farmers' love for this forest.

**From picking to processing, we follow the highest standards**
The coffee beans launched by Chinchiquilla are hand-picked from ripe coffee cherries and float-screened at the farm’s wet processing station to remove defective beans floating on the water. Next, the coffee cherries are dehulled in anhydrous conditions and fermented, usually in plastic bags or open-air fermentation tanks, with an average fermentation time of about 35 hours.
Once fermentation is complete, the coffee is washed and then moved to a drying area. Drying is usually done in a solar drying room or on a floor covered with wooden boards and covered with plastic sheets. The entire drying process takes an average of 10 to 15 days to reach the desired moisture content. Once the parchment coffee is dried, it is stored and then transported to Caravela's buying stations in Chirinos or Jaen.
Finally, at the buying station, quality analysts conduct physical and sensory analysis of the coffee to assess its quality grade and decide whether to purchase it. Once evaluated, the coffee is gathered at buying stations and then transported to processing plants in preparation for export.
