We don't blindly chase roast levels; our primary goal is to reveal the original flavors of the green coffee beans.
We begin by testing the overall profile of the beans using our standard roasting technique. After cupping, we decide on the desired flavor profile based on the bean's characteristics. We then review and adjust the roasting curve, fine-tuning to find the optimal roast level that maximizes the bean's potential. Our emphasis is on distinct flavors, bright acidity, rich sweetness, and overall balance.
