Coffee Processes
This refers to the process of transforming ripe red cherries into dried green beans. Each processing method has its advantages and disadvantages, influenced by the natural environment and specific demands of the origin. Therefore, each origin has a suitable processing method, briefly described below.
**【Natural Process】Natural / Sundried / Dry Processed**
Also known as sun-dried or dry-processed, this is the most traditional and common method, involving no water in the processing. Originating in Ethiopia, harvested coffee cherries are sun-dried and then hulled, with the seeds still inside. During the prolonged sun exposure, they absorb flavors from the skin, pulp, and mucilage, resulting in fuller coffee sweetness and body, and facilitating the creation of unique aromas.

**【Washed Process】Washed / Wet Processed**
Also known as wet-processed, this method involves removing the skin and pulp from all coffee cherries before drying. They are then soaked in fermentation tanks to remove the mucilage clinging to the seeds, followed by washing with water and drying in the sun or by machine.
The washed process yields a cleaner, crisper mouthfeel compared to the natural process, with a lighter body. It typically offers brighter flavor expressions with the desirable acidity characteristic of specialty coffee. While it also possesses fruity notes, it is usually easier to distinguish the individual flavor components.

**【Honey Process】Honey / Pulped Natural / Semi-dry Process**
The honey process is a method that combines aspects of the natural and washed processes. Similar to the washed process, the skin and pulp are removed, but instead of using fermentation tanks, the mucilage is left on to be sun-dried. "Honey" does not refer to added honey; it signifies the sticky mucilage layer, which feels like honey, hence the name "honey process." The mucilage layer retains a high proportion of sugars and acids, which is key to the honey process. The amount of mucilage left determines the sweetness.
The flavor profile produced by the honey process falls between that of the natural and washed processes, resulting in a unique cup of coffee. It has a cleaner mouthfeel than the natural process and, due to the residual mucilage, offers richer syrupy sweetness and more pronounced acidity, but with a fuller body than the washed process.
