The Geisha coffee, once named one of the "World's Most Expensive Coffees" by Forbes, is a legendary varietal in the specialty coffee world. There is considerable confusion surrounding the Geisha varietal, as multiple genetically distinct plant types are referred to as Geisha, many with similar geographical origins in Ethiopia. Recent genetic diversity analysis by World Coffee Research has confirmed that the T2722 varietal cultivated in Panama and its descendants are unique and consistent. When managed well at high altitudes, it correlates with exceptionally high cup scores and is renowned for its delicate floral, jasmine, and peach-like aromas.
Regarding the name, the spellings Geisha and Gesha are often used interchangeably, stemming from transliteration as there is no fixed translation from Ethiopian dialects to English. The coffee was initially recorded with the spelling Geisha in cultivation records, and this spelling was largely maintained by coffee researchers and databases for decades, leading to its initial promotion and use in the coffee industry. The varietal was originally collected from a mountain in Ethiopia whose name is commonly translated into English as either Gesha or Geisha.

Coffee Processes
This refers to the method of transforming ripe coffee cherries into dried green beans. Each process has its advantages and disadvantages, influenced by the origin's natural environment and specific needs. Consequently, each region adopts suitable processing methods, briefly outlined below.
**【Natural Process】Natural / Sundried / Dry Processed**
Also known as the dry process, this is the most traditional and common method, involving no water. Originating in Ethiopia, coffee cherries are harvested and sun-dried before hulling, with the bean still inside. During the prolonged sun-drying period, the beans absorb flavors from the skin, pulp, and mucilage, resulting in a fuller body, enhanced sweetness, and the development of unique aromas.
Coffee producers lay all the cherries on drying beds under the sun, which can be patios or raised drying tables. Over 3-6 weeks, the coffee ferments, and producers turn them to ensure even drying and prevent spoilage. During this time, the sugars within the fruit and the mucilage adhering to the seed develop flavor and sweetness. Once dried, machines are used to separate the dried fruit pulp and skin from the seed. Coffees processed using the natural method are juicy, syrupy, and well worth the effort.

**【Washed Process】Washed / Wet Processed**
Also known as the wet process. Before drying, all the fruit pulp and mucilage are removed from the coffee cherries. They are then soaked in fermentation tanks to remove any remaining mucilage, followed by washing with water and drying in the sun or by machine.
The washed process yields a cleaner, crisper cup compared to the natural process. The body is typically lighter, with brighter flavor profiles and the essential vibrant acidity found in specialty coffee. While fruit notes are still present, they are often more distinct and easier to discern.

**【Honey Process】Honey / Pulped Natural / Semi-dry Process**
The honey process is a method that combines elements of the natural and washed processes, first developed in Costa Rica. Similar to the washed process, the fruit pulp and skin are removed. However, instead of using fermentation tanks, the mucilage is retained and sun-dried. The term "honey" does not refer to added honey but to the sticky mucilage layer, which has a honey-like consistency, hence the name. The retained mucilage layer is crucial as it preserves a high proportion of sugars and acids, with the amount of mucilage determining the sweetness.
The flavor profile produced by the honey process falls between the natural and washed methods, resulting in a very unique cup. It offers a cleaner mouthfeel than the natural process, with a richer syrupy sweetness due to the residual mucilage, and more pronounced acidity, yet it is fuller-bodied than the washed process.
