Once hailed by Forbes as one of the "World's Most Expensive Coffees," the Geisha varietal is a legendary name in the specialty coffee community. There is significant confusion surrounding the Geisha varietal due to multiple genetically distinct plant types being referred to as Geisha, many with similar geographical origins in Ethiopia. Recent genetic diversity analysis by World Coffee Research has confirmed that the T2722 variety cultivated in Panama and its descendants are unique and consistent. When managed well at high altitudes, this varietal shows a positive correlation with extremely high cup quality and is renowned for its delicate floral, jasmine, and peach-like aromas.
Regarding the spelling of the varietal name, "Geisha" and "Gesha" are often used interchangeably due to phonetic transliteration, as there is no fixed translation from Ethiopian dialects to English. The coffee was initially recorded with the spelling "Geisha" in cultivation records. Coffee Processes
This refers to the method of transforming ripe coffee cherries into dried green beans. Each process has its merits and drawbacks, influenced by the natural environment of the origin and specific requirements. Therefore, each region adopts processing methods best suited to its conditions, as briefly outlined below.
**【Natural / Sundried / Dry Process】**
Also known as the natural drying method or non-washed process, this is the most traditional and common method, involving no water during processing. Originating in Ethiopia, coffee cherries are harvested and dried in the sun before hulling. The seeds remain inside, absorbing flavors from the skin, pulp, and mucilage during the prolonged sun-drying period, resulting in a fuller body, enhanced sweetness, and unique aromas.
Coffee producers place all cherries on drying beds in the sun, which can be patios or raised platforms. Over 3-6 weeks, the coffee ferments, and producers turn them for even drying and to prevent spoilage. During this time, the sugars within the fruit and the mucilage adhering to the seed create flavors and increase sweetness. Once dried, machines separate the dried pulp and skin from the seed. Natural processed coffees are juicy and syrupy, well worth the effort involved.

**【Washed / Wet Process】**
Also known as the wet processing method, this involves removing the skin and pulp from the coffee cherries before drying. The beans are then soaked in fermentation tanks to remove the remaining mucilage from the seed, followed by washing with water and drying in the sun or using mechanical dryers.
The washed process yields a cleaner and crisper cup compared to the natural process, with a lighter body and generally brighter flavor expression. It typically possesses the vibrant acidity characteristic of specialty coffee and often presents fruit-toned flavors that are easier to discern.

**【Honey / Pulped Natural / Semi-dry Process】**
The honey process is a method that combines elements of both the natural and washed processes, first developed in Costa Rica. Similar to the washed process, the skin and pulp are removed, but instead of using fermentation tanks, the beans are sun-dried with the mucilage layer intact. The term "honey" does not refer to added honey but to the sticky mucilage layer, which is reminiscent of honey, hence the name. This mucilage layer retains a high proportion of sugars and acids, which is key to the honey process; the amount of mucilage left determines the sweetness.
The flavor profile resulting from the honey process falls between that of the natural and washed methods, producing a very unique cup. The mouthfeel is cleaner than the natural process, and due to the residual mucilage, it also offers richer sugary sweetness and more pronounced acidity, yet it is fuller-bodied than the washed process.
