▶ March 16th Notes:
After a two-year hiatus, we are delighted to reintroduce Rwandan coffee.
Rwanda has always been an indispensable piece in the coffee flavor profile. It possesses the distinct, vibrant intensity of Kenyan coffees, while also retaining the exceptional washed aroma characteristic of Ethiopian beans. If not for the shadows of past civil unrest and prolonged political instability, I have always envisioned Rwanda becoming the brightest rising star among African coffee-producing regions.
This particular batch features the "Greenhouse Black Honey" processing method, as seen in the image below. Coffee cherries are dried indoors within a greenhouse to prevent mold and excessive sun exposure, gently dehydrating the beans to an optimal moisture content. Greenhouse processing has gained traction in Central and South America in recent years, offering a stable development environment for regions with frequent rainfall!
This is a coffee with a distinct personality, worthy of your patient exploration. If you have any brewing ideas, please feel free to discuss them with me anytime!
▶ Additional Processing Station Information:
"JURU" in Kinyarwanda means "sky, heaven," hence the naming of this series as "Sky Realm" – symbolizing coffee from high altitudes. Farm Manager Mr. Leonard insists on organic and environmentally friendly cultivation and processing methods:
· Utilizes livestock waste for organic fertilizer.
· Employs organic weeding practices.
· Implemented water-saving depulpers (Penagos) to reduce the environmental impact of post-harvest processing.
▶ Grinding Services Available
*Please specify your brewing equipment in the notes. Grinder model used is EK 43.
