"Traditional method (natural fermentation and long-term aging)"
They do not add cultured microorganisms or use any modern techniques to shorten the brewing period. Instead, they use soy sauce that is fermented and aged over a period of 1-2 years using the power of microorganisms that live in the brewery as the temperatures change throughout the seasons.
"We use only domestically produced ingredients and do not use any synthetic seasonings, preservatives, or genetically modified ingredients."
While 97% of soy sauce sold in Japan is made from imported soybeans, we select raw materials from known producers, mainly domestic whole soybeans and domestic organic vegetables.
